METHOD
Step 1
· Combine the red wine, orange juice, brown sugar, cinnamon sticks, cloves and star-anise in a heavy-based saucepan over low heat.
· Cook, stirring, for 2 minutes or until sugar dissolves.
· Add the pears and orange discs. Increase heat to medium-high and bring to the boil.
· Reduce heat to low. Simmer, partially covered, for 35 minutes or until pears are just tender.
· Remove from heat and set aside to cool slightly.

· Cover with foil and bake for 1 hour 15 minutes or until the rice is tender and golden. Set aside for 5 minutes.

· Keep warm. Strain syrup into a saucepan, discarding cloves.
· Bring to the boil over medium-high heat. Simmer for 5 minutes or until reduced by half.
