Ingredients
For the Cake:
- 2 ½ cups all-purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ¾ cup unsalted butter, room temp
- 1 ¾ cups granulated sugar
- 4 large eggs
- 1 NY Vanilla bean (seeds scraped) or 1 tbsp NY Vanilla Bean Paste
- 1 cup whole milk
- 1 tsp vanilla extract (optional boost)
For the Vanilla Bean Buttercream:
- 1 cup unsalted butter, room temp
- 3 ½ cups powdered sugar
- 1–2 tbsp heavy cream
- 1 NY Vanilla bean (seeds scraped) or 1 tbsp Vanilla Bean Paste
- Pinch of salt
Instructions:
1. Make the Cake:
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- In a medium bowl, whisk flour, baking powder, and salt.
- In a large mixing bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating after each. Mix in vanilla bean seeds.
- Alternate adding flour mixture and milk to the butter mixture, beginning and ending with flour.
- Divide batter evenly between pans. Bake 25–30 mins or until a toothpick comes out clean.
- Cool completely before frosting.
2. Make the Buttercream:
- Beat butter until creamy and pale.
- Gradually add powdered sugar, beating well.
- Mix in vanilla bean seeds, salt, and cream until smooth and spreadable.
3. Assemble:
- Level cake layers if needed.
- Spread buttercream between layers, then frost top and sides.
- Decorate with edible flowers, berries, or a dusting of powdered sugar.
